Healthy pancakes

So my housemate kept going on about these amazing pancakes she was making. Trying to find a small snack for fuel before or after the gym I decided to give it a shot. They are soooo easy to make and so yummy you would never know it is only one banana and one egg.

Method….so easy

Peel one banana ad mash up into a mug or bowl. Once as mashed a possible, crack in one egg. Wish until smooth. Use a non stick frying pan, spray a little oil.  Heat needs to be medium to high. Slowly pour the mix into a small pancake shape. Then wait for the bottom of the pancake to go golden, keep checking. Once it is golden all over but not too earl, you should be able to pick it up on a large spatula and flip. Repeat on the other side and then make your second pancake. Perfect amount for a little snack. Especially before the gym with so many health benefits as they contain high amounts of fibre, potassium and protein. They are full of vitamin b6 which is normally found in fish and meat, it helps to stop skin rashes, fatigue and mood swings. They’re also full of manganese which is used for bone production, skin integrity and for blood sugar control. I like to add raspberries as they taste glorious together or a tiny bit of honey if I’m feeling naughty! Let making!! Enjoy LLWMx
